The wine


Annual production : 19 000 hl

Basic yield : 60 hl/ha

Varieties : Chenin (80 % minimum), Chardonnay, Sauvignon


Degustation


Eye : Yellow gold color.

Nose : The tufa stone brings finesse and lightness, aromas of stewed white fruits, white flowers and a characteristic fine mineral note of tufa stone dust.

Palate : Rather supple, sometimes very dense, fine and flowing. Fresh and balanced finish..



Service temperature :10°.



Harmony of dishes and wines: white brines magnify fish (fillet of sea bream, blanquette of fish...) and soft cheeses (Cantal, Comté, Beaufort...).

Ageing potential : Supple wines to be consumed within five years. The most concentrated white wines will improve with ageing (5 to 15 years).


The vineyard


Location: The appellation area covers 27 communes in Maine-et-Loire, 3 in Vienne and 2 in Deux-Sèvres.


Area : 390 ha


History: Capital of the Huguenots under Henri IV, Saumur has been an important wine trading center since the 12th century due to its ideal topographical conditions (see "Saumur Brut"). Today, most of the major regional trading houses still have their headquarters in this area.


Soil: The vineyards are scattered in small parcels, on tufa (chalk) hills and Senonian or Eocene outcrops.


Climate: Temperate oceanic, but the hills of the Saumurois slow down the western winds; the parcels farthest from the Loire are therefore subject to a continental influence.
