Varieties : Chenin Blanc (Pineau de la Loire)
Technical constraints: Manual harvesting by successive selections of grapes that have reached over-ripeness and are concentrated by the action or not of noble rot.
Degustation
Eye : Intense golden yellow color with green reflections evolving on the old gold with amber reflections.
Nose: freshness and complexity. Rhubarb, peach, apricot mingle with notes of white flowers.
Palate: both lively and unctuous, but without excessive sweetness.
Harmony of food and wine: ideal as an aperitif with a fresh fruit brochette, but also with a Roquefort pie or a tarte tatin.
Serving temperature: cooled to 6-8°C
Aging potential : excellent wine for aging
The vineyard
Location: This vineyard is located on the Cretaceous cuesta of the South-Western edge of the Paris Basin, it is planted on tufa limestone soil (chalk). The delimitation has recognized a vast and well exposed area, but generally only 20 hectares are declared in this AOC.
The delimited terroirs of this AOC correspond to well-exposed and ventilated slopes that favor early vegetation and allow for overripe harvests, even those affected by noble rot.
